Fried vegetables
Step 1
Slice the Zucchini and quarter the tomatoes.
Step 2
Heat the oil in the pan. Leave the heat on high. Add the zucchini and fry for 2-3min. Then add the tomatoes. Season with salt, pepper and thyme and fry for another 2min.
Sauteed onions
Step 3
Cut the onion into thin slices
Step 4
Heat the oil in the pan. Reduce the heat to medium and add the onions. Fry for 2-3min while stirring. Drizzle on the honey and let it caramelize for another 2min.
Sandwich
Step 5
Slice the bread and spread with olive oil. Toast until golden brown
Step 6
Spread one half with the garlic mayonnaise and top it with the salad, fried vegetables and sauteed onions
Step 7
Dice the pumpkin and place it on the sandwich.
Step 8
Crumble the feta cheese over it and melt it with a blow torch. Alternatively, put in the oven for 1-2min at grill setting.
