Instructions

Step 1
Preheat oven to 350 Generously salt the pork and stir to combined and let sit at room temp for 30 minutes
Step 2
In a dutch oven, put in the lard, the juice of one orange, and then the orange itself. Half of one onion cut in half. One bottle of mexican coke. Add garlic, bay leaves, cumin seeds, and oregano.
Step 3
Bring to simmer, then add meat. Stirring to combined. Bring to simmer.
Step 4
Put in oven at 350 for 1.5 hours uncovered, stirring every half hour
Step 5
Add one can of evaporated milk, stir to combined, and continue cooking for 1.5 hours
Step 6
Put on rimmed baking sheet, and let cool for 1 hour. Pour some juices on top, Save some fat.
Step 7
When ready to heat, either pan sear in the fat, or put under broiler for about 10 minutes
