Harissa rice and roasted carrots

Instructions

Step 1
Preheat oven to 200c, Combine Carrots, Harissa paste, Oil, salt and pepper in a roasting tray and put in oven for 20mins
Step 2
Meanwhile cook rice for whatever is stated on the packet. Try to time it so it'll finish a couple of minutes before the carrots
Step 3
Combine all Harissa sauce ingredients in a small bowl
Step 4
Once rice is done combine most of the sauce with the rice leaving some to drizzle over the carrots on top
