Instructions
Step 1
Into a bowl add the marinade ingredients, which are the chopped garlic, peppercorns, brown sugar, Soy sauce, vinegar and 100ml water.
Step 2
Chop the pork into cubed pieces and place into the marinade, ensure all the pork is coated, cover the bowl and leave in a refrigerator for approximately 2 hours.
Step 3
Add 2 tbsp of vegetable oil into a deep saute pan and add in the sliced onion and cook until translucent, remove from the pan into a bowl and place the pan back on the heat and add the remaining oil.
Step 4
Remove the pork from the refrigerator and place the pieces of pork into the hot pan.
Step 5
Brown the pork on both sides and remove it from the pan leaving it to rest in a bowl.
Step 6
Add the onions back into the pan and then add the pork back into the pan and allow to cook on medium-high heat for 2 minutes then add the marinating juices and turn up the heat.
Step 7
When the pan begins to boil cover the pan with a lid reduce the heat and allow to simmer for 20-30 mins.
Step 8
Once the sauce has been reduced add in the remaining 50ml of water, stir the pan, cover and simmer until the sauce reduces and thickens.
Step 9
Once the sauce has been reduced to a preferred consistency remove it from the heat.
Step 10
Serve with rice, garnish with the sliced spring onions lick your lips and enjoy.
