Ingredients
4 servings
½ cupcajun seasoning
1 tablespoonsmoked sweet paprika
1 tablespoonfreshly ground black pepper
1 teaspoononion powder
1 teaspoongarlic powder
or garlic salt
1 teaspoonground dried oregano
1 teaspoonground dried thyme
or rosemary
cayenne pepper
4 x 5 ounceskinless catfish fillets
¾ teaspoonkosher salt
1 tablespoonolive oil
2 tablespoonsunsalted butter
¼ cupfresh herbs
loosely packed, parsley, mint or chervil
lemon wedges
Instructions
Step 1
1. Stir together Cajun seasoning, paprika, black pepper, onion powder, garlic powder, oregano, thyme and cayenne
Step 2
2. Sprinkle fish with salt and let stand for 20 minutes. Drizzle with oil
Step 3
3. Heat a large cast iron or heavy saucepan over high until screaming hot
Step 4
4. Sprinkle fillets evenly with 1/4 cup spice mixture, pressing to adhere
Step 5
5. Add butter to skillet and swirl to coat
Step 6
6. Place fillets in skillet and cook for two minutes. Flip fillets and cook two to three minutes. The spices will have formed a highly colored crust in varying shades of sunset and midnight black. The fish is done when it flakes apart under gentle pressure of your finger
Step 7
7. Remove flays to serving plates and sprinkle evenly with fresh herbs. Serve with lemon wedges
