Mutti's Hungarian Goulash

A beef stew spiced with paprika eaten with noodles, mashed potatoes, or rice. I grew up eating this when my dad made it, and he grew up eating it when his mother ("Mutti," Erika) made it. Nowadays the Donnert Family Circus can be seen in Budapest and my quiet German cousins can be found in Bavaria. There are also 2 American strands each coming from either the Hungarian or German camps. This recipe is from when we were all one family on the present day Hungarian-German border, and it is one of my most favorite foods.

Instructions

Step 1
Heat a large skillet with a tablespoon of your cooking oil of choice.
Step 2
Mince the onions. Brown them (not blacken) in the heated skillet. The color of your sauce is perfected here.
Step 3
If the stew meat is not in bite size chunks, trim it. Then add it and the garlic to the onions and brown.
Step 4
Add the paprika, tomato sauce, sauerkraut, and chocolate. Then add broth and red wine to cover. The ratio here is up to you. I usually do 1 cup red wine and the rest broth.
Step 5
Substitutions: if you don't have tomato sauce, you can use either 15 oz diced tomatoes or a whole peeled tomato. if there is no "bavarian" sauerkraut, add a tablespoon of sugar and some caraway seeds. if you don't have red wine, just use beef broth. We use beef broth or bouillon interchangeably.
Step 6
Bring to a gentle boil then reduce the heat immediately.
Step 7
Set to simmer for 1 hour, covered, preferably in a pressure cooker.
Step 8
Thicken with a bit of corn starch. (Mix with water, then add some of the broth to increase the temperature, so it doesn't clump)
Step 9
Cook 15 minutes or so to complete the thickening process. No cover needed.
Step 10
Serve with starch of choice. We prefer mashed potatoes.
