Instructions
Step 1
Set your sous vide for 75 deg c. While it is coming to tempurature prepare the recipe.
Step 2
Into a blender add all of the ingredients except for 1/4 cup of the gruyere cheese and the bacon. Puree until it is a uniform mixture.
Step 3
Spray 4 small canning jars with a non-stick spray. Pour egg mixture into the jars and crumble or cut one piece of bacon on top of the egg mixture. Place the lids on the jars keeping them loose.
Step 4
Sous vide for 45 minutes or until the eggs have set. Remove from the water bath and leave them to cool until they can be handled. Take the lids off and run a knife around the edge of each egg and remove from the jar.
Step 5
Sprinkle additional shredded gruyere cheese on top and broil until they just turn brown.
