Instructions

Step 1
Grease a skillet with cooking spray and heat over medium high. Add salmon skin side up and cook 4 minutes. Flip and cook another 4-5 minutes until cooked through to your liking. Set aside.
Step 2
Tear kale into pieces and add to a bowl.
Step 3
Whisk together lemon juice, olive oil, mustard, and pepper. Pour over kale and use your hands to massage the dressing into the kale.
Step 4
Sprinkle with cranberries, pecans, and blue cheese and toss to combine. Top with salmon.
