INGREDIENTS:
- 1 red onion
- 2 garlic cloves
- Vegetable oil (for frying)
- 4 tomatoes
- 1 tbsp paprika & garam masala, 2 tsp turmeric & cumin, 1/2 tsp coconut sugar, 1 tsp salt
- 2 heaping tbsp tomato paste
- 2 cans chickpeas
- 1 cup full fat coconut cream
- Juice from 1/2 a lime
INSTRUCTIONS:
Strat by chopping your onion, garlic and tomatoes.
Heat oil in a pan over medium high heat, add the onion and garlic and fry for 2 minutes.
Add the spices and fry until fragrant.
Add chopped tomatoes, tomato paste and some boiling water into the pan and fry until tender. Remove from the heat and transfer into a blender. Blend until smooth and pour back into the pan over medium high heat.
Drain the liquid for the chickpeas before adding them into the pan. Bring to a boil and lower the heat. Let it simmer for 5 minutes before adding coconut cream. Stir and cook for 5 more minutes. Finally, squeeze in 1/2 a lime and stir.
Serve over rice or with naan (optional) & ENJOY!ā¤ļø
