Step 1
Finely grate coconut
Step 2
Add 100g sugar (saving 1 tbsp for later) and 1 tbsp vanilla essence to the coconut and mix
Step 3
Sift 300g flour and set aside
Step 4
Wash 750g sweet potatoes then boil until they can be pierced with sharp utensil
Step 5
Drain, peel and mash the sweet potatoes with a fork. (The drier they are before mashing, the easier it is to make the dough later trust me)

Add 2 tbsp milk powder and 1 tbsp of sugar
Step 7
Gradually add the flour and knead to make a soft dough - this is really sticky if you get it too wet and that may require extra flour
Step 8
Take 1/4 of the dough at a time and roll out onto a floured surface and roll out until 2-3 cm thick
Step 9
Cut into circles about 8 cm wide with a cup or cutter, removing the excess dough
Step 10
Place into a dumpling maker with 1 tsp of the coconut mix in the middle and close to form a semi-circle sealed at the edges. (You can do this by hand and seal the edge with a fork, but I found the results from the dumpling maker a bit more uniform)
Step 11
Deep fry in about 2 inches of vegetable oil, a few at a time over a medium heat until golden brown. For an extra authentic taste add 2 tbsp of ghee to the oil. Leave to stand on some kitchen paper to soak excess oil. Serve warm.
