Veal with Wine & Cream Sauce

Instructions

Step 1
Coat pieces of veal in seasoned flour & fry quickly in melted butter until brown. Set aside.
Step 2
Add onion to pan, sautรฉ gently until soft & golden (approx 10mins)
Step 3
Deglaze with wine & cook rapidly until half reduced, add stock, cream. Season to taste.
Step 4
Cook pasta, reserving some pasta water.
Step 5
Reduce again on low/medium heat, then return veal to pan.
Step 6
Stir in 1 tblspn parmesan cheese.
Step 7
Toss pasta into to veal sauce to coat. Add extra pasta water if too dry.
Step 8
Parmesan to serve
