Ingredients

For the meatballs
500g2%-fat turkey mince
1 x 400gtin kidney beans
rinsed and crushed
1 x 260gtin sweetcorn
drained
1egg
1 tspgarlic granules
1 tsponion granules
½ tspground coriander
½ tsppaprika
½ tspchilli powder
black pepper
low-calorie cooking spray
sea salt
freshly ground pepper
For the sauce
1onion
peeled and thinly sliced
1pepper
medium, deseeded and thinly sliced
low-calorie cooking spray
2 x 400gtins chopped tomatoes
1 tspworcestershire sauce
1chicken stock cube
crumbled
1 tspgarlic granules
1 tsppaprika
chilli powder
adjust to taste
black pepper
coriander leaves
to serve

freshly ground pepper
Instructions
Step 1
Preheat the oven to 220°C (fan 200°C/gas mark 7).
Step 2
Mix the meatball ingredients together in a bowl. Shape into large meatballs. The mix should make about twenty meatballs slightly larger than a golf ball.
Step 3
Line a baking tray with foil and spray with low-calorie cooking spray. Lay out the meatballs so that they're not touching and place in the middle of the oven for 25 minutes, until the turkey is white and cooked throughout.
Step 4
While the meatballs are in the oven add the onion and pepper to the pan and gently fry in low-calorie cooking spray for 10 minutes until softened. Add the rest of the sauce ingredients and stir. Reduce the heat to low and simmer for 15 minutes until the meatballs are ready. Add the meatballs to the sauce and serve with an accompaniment of your choice, sprinkled with the coriander leaves. You can also cool and pop them in the freezer to have another day.
