Instructions
Step 1
Preheat oven to 400 d F, coat 12 muffin cups with cooking spray
Step 2
Combine ground flax seeds, whole wheat flour, all purpose flour, baking powder, cinnamon, baking soda, and salt in a lg bowl. Whisk eggs and maple syrup in a medium bowl 'til smooth. Add buttermilk, oil, orange zest, O.J. and vanilla and whisk.
Step 3
Make a well in the dry ingredients and stir in wet with a rubber spatula, 'til just moistened. Fold in blueberries. Scoop batter into muffin cups and sprinkle with sugar.
Step 4
Bake 'til golden brown and tops spring back with touched (15 to 25 minutes). Cool in pan 5 minutes then loosen and turn onto wire rack.
