Ingredients

1 Tbspchilli powder
1 Tbspsmoked paprika
1 Tbspground cumin
salt
1sweet potato
big, peeled and chopped into small cubes
1 Tbspolive oil
100gkidney beans
drained and rinsed, or kidney
1 tspgarlic
finely chopped
cherry tomatoes
halved
0.25red onion
small, finely chopped
fresh coriander
chopped
1avocado
medium, sliced
100glettuce
finely chopped
50gsweetcorn
drained
lime wedges
coriander

Instructions
Step 1
Preheat oven to 220°C. In a small bowl mix together chilli powder, paprika, cumin and salt.
Step 2
Toss sweet potatoes pieces with olive oil and half the seasoning mixture from the small bowl. Bake for 15-20 minutes until tender and cooked through.
Step 3
Heat a frying pan with a little olive oil and add the garlic, beans and the remainder of the seasoning mix and cook until beans are warmed through.
Step 4
In a bowl, combine the chopped tomatoes, onion, coriander and lime and season.
Step 5
Once the sweet potatoes are cooked, combine all of the ingredients in a bowl and top with optional jalapenos, avocado, extra lime and coriander.
