Crispy Gnocchi with bacon

Instructions

Step 1
Heat 1 tbsp of oil in a large, deep frying pan over a medium heat. Add half of the gnocchi and fry for 5-7 minutes, until golden and crispy.
Step 2
Tip the gnocchi out of the pan and into a bowl. Repeat with the remain oil and gnocchi - frying the gnocchi in two batches helps them to become evenly crispy. Set aside.
Step 3
Turn the heat up to high and return the pan to the heat. Add the bacon lardons and cook for 5 minutes, turning occasionally. Reduce the heat to medium, then add the courgettes and cook for a further 5 minutes.
Step 4
Stir in the cream cheese, milk and peas, then season with plenty of black pepper. Let everything bubble away for 5 minutes, until the peas are cooked and the cream cheese has melted into the sauce. Add the gnocchi back to the pan and warm through and turn to coat in the sauce. Taste and add salt, if needed.
