Vegan Chicken Lettuce Wraps

Ingredients:
1 package crumbled high-protein tofu
1 diced bell pepper
2 cups diced shiitake mushrooms
Garnish: chopped roasted peanuts, scallions, sesame seeds
Bibb, romaine or iceberg lettuce for wraps
secret sauce:
1/2 cup Hoisin sauce
1 tbsp rice vinegar
3 tbsp soy sauce (sub coconut aminos)
1 tsp toasted sesame oil
1 tsp sriracha
1 tsp ginger
1/2 tsp garlic powder
How to:
1. Whisk sauce ingredients in a bowl
2. Dice veggies and crumble tofu
3. Saute veggies and tofu in a nonstick pan until the water is cooked out (10 minutes)
4. Add the hoisin sauce and cook on medium low and simmer for 10-15 until the sauce thickens
5. Add the mixture to your lettuce cups and top with garnishes!
6. Enjoy!
