Wet Coating:

1egg

3 TbspSoy Sauce
or Coconut aminos for gluten free option

3 Tbspapple juice

3 Tbspcornstarch

½ tspbaking soda
Dry Coating:

0.5 CupFlour
for gluten free option use king Arther 1:1 ratio flour

½ cupcornstarch
plus more as needed

½ tspbaking powder

½ tspkosher salt

Step 1
Cut chicken into strips

Prepare the wet coating in a bowl whisk together egg white, soy sauce and apple juice combine cornstarch with baking soda add mixture. mix in chicken and let rest while you prepare the next step.

Prepare the dry coating. Combine all dry ingredients . Add to chicken mixture and mix well
Step 4
Heat oil in a pot or deep fryer. Sprinkle a little more cornstarch into the chicken mixture to ensure all strips are fully coated. Once oil is hot, add chicken strips, one at a time , to oil. Fry chicken in batches until crispy. Drain on a cookie rack or paper towel lined baking sheet
Step 5
Meanwhile, prepare the sauce in a pot, combine sugar, honey, soy sauce, water, rice vinegar, garlic, sesame oil , hot sauce , salt, and pepper. Bring to a boil then add in the cornstarch slurry. cook until sauce thickens about 2 minutes
Step 6
Add fried chicken to the sauce and make sure its coated evenly
