Instructions

Step 1
Slice Pork belly into 2-3cm across cubes without cutting off pork skin, simply put pork belly in a pot filled with water, throw in sliced ginger, green onion, cooking wine and Szechuan peppercorn. Bring water to boil and continue to cook until pork belly is fully cooked, which takes about 30-35 minutes.
Step 2
Prepare BBQ sauce powder with red chili powder, lamb BBQ sauce powder, salt and garlic powder. Mix it well.
Step 3
Remove pork belly from heat and pat it dry with paper towel. Dust BBQ sauce spices all over pork belly; marinate it for a couple of hours if possible.
Step 4
Poke pork skin with a toothpick, seal pork belly with a piece of tin foil, simply secure tin foil with toothpicks. Apply a small amount of backing soda, salt and a thick layer of sea salt on top of pork skin. Make sure salt or sea salt does not get into the pork, otherwise pork belly would be way too salty.
Step 5
Put pork belly in the oven at 400℃ for around 35 minutes. Remove pork belly from the heat, and simply scrape and clean the salt, and remove toothpicks and tin foil. Then apply a layer of white vinegar on the pork skin.
Step 6
Put pork belly back in the oven at 400℃ for another 35 minutes. Remove from the heat. Slice and serve them warm with BBQ spices or sugar and radish.
