Instructions
Step 1
Mix red onion with red wine vinegar, salt, and pepper. Let marinate at least 10 minutes.

Preheat oven to 450 deg F
Step 3
Microwave squash 3 min to soften the skin, let cool, then slice into 1/2" semicircles.
Step 4
Cut carrots diagonally into 2" length pieces

Rinse and drain chickpeas
Step 6
In a large bowl, mix oil, cumin, coriander, 2 tsp salt, and 1 tsp pepper. Add in chickpeas, carrots, and squash.
Step 7
Line baking sheet with foil and smooth into one layer. Roast vegetables for 12-15 min until golden brown and squash is easily pierced. Chickpeas should be crispy.
Step 8
Remove from oven and let cool slightly so the vegetables won't wilt the lettuce
Step 9
Serve roast vegetables over lettuce. Top with goat cheese and pickled onions. Drizzle with olive oil and red wine vinegar if desired.
