Honey Castella Cake

This super soft and bouncy Taiwanese Castella cake is my favorite! It has a very light and fluffy texture, and the honey glaze on top adds the perfect sweetness!

Instructions

Step 1
Start by preheating your oven to 320f and separating your egg yolks & whites. Place the egg whites in the fridge in the meantime.
Step 2
Combine your butter and milk, and heat in the microwave until melted. Let it cool down.
Step 3
In a separate bowl, sift in the flour and salt. Pour in the melted butter mixture, followed by the egg yolks, and mix well.
Step 4
In a separate clean bowl, add the cold egg whites and cream of tartar. Beat until frothy, and then slowly drizzle in the sugar. Continue to whip until soft/firm peaks are formed, not stiff.
Step 5
Whisk 1/4 of the whipped egg whites into the batter to loosen it up. Gently fold in the rest of the egg whites.
Step 6
Transfer batter to a parchment-lined 8x8 baking pan. Reduce the oven temperature to 300f, and bake for about an hour.
Step 7
To make the simple honey glaze, combine the honey and water in a saucepan over medium heat. Cook for about 5min, until mixture comes to a simmer. Remove from heat and let it cool down.
Step 8
Once the cake is done, turn off the oven and leave it in there with the door slightly open for 10min. This is to help it not crack as it cools down.
Step 9
Remove the cake from the oven, and let it cool down before carefully removing it from the pan. It will deflate a bit as it cools. Generously spread the honey glaze on top, and enjoy!
