Step 1
In a heavy pot, melt the butter over medium heat and sauté the onion and garlic until tender, stirring occasionally, about 5 minutes. Add the broth and carrots and simmer until the carrots are tender, about 15 minutes.
Step 2
Working in batches, purée the soup in a blender or food processor until nearly smooth. Return soup to the pot and add the pumpkin and half-and half. Stir and heat through, seasoning with salt and pepper to taste. Garnish with parsley.
