Ingredients

3 tablespoonsolive oil
¾ cuponions
chopped
1 teaspoonminced garlic
2 teaspoonsground cumin
1 teaspoonchili powder
½ teaspoonground coriander
½ teaspoonsalt
½ teaspoonground black pepper
2 x 15.5 ouncesblack beans
cans, rinsed and drained
2 tablespoonstomato paste
or ketchup
¾ cupquick cooking oats
1 cupfrozen corn kernels
thawed
4hamburger buns
toasted if desired
ketchup

Instructions
Step 1
Heat 2 tablespoons of the oil in a large skillet over medium heat.
Step 2
Add the onions and garlic and sauté until the onions are tender, 5 minutes.
Step 3
Stir in the cumin, chili powder, coriander, salt, and pepper.
Step 4
Add the beans and tomato paste and stir to blend.
Step 5
Place the oats in a food processor, add the black bean mixture, and pulse until everything is combined; the mixture should still have some texture, but be quite nicely blended.
Step 6
Remove the processor blade and stir in the corn with a spoon.
Step 7
Shape the mixture into 4 large or 6 smaller patties.
Step 8
Place them on a plate and chill for about 30 minutes, if you have time.
Step 9
If you don't, don't—they'll just be a bit more delicate to flip.
Step 10
Wipe out the skillet and heat the remaining 1 tablespoon olive oil over medium-high heat.
Step 11
Add the patties and cook without moving them until well browned on the bottoms, about 5 minutes, then flip them carefully and cook on the second side until nicely browned, 5 minutes more.
