Instructions

Step 1
Preheat/Season Cast Iron Pot (Wipe with Oiled Coffee Filter if Cast Iron Looks Dry)

In cast iron pan, fry a few slices of bacon (5 to heat up, reduce to 3 when sizzling)

then in the rendered bacon fat cook 16 oz sliced mushrooms

Crack Eggs, Add Seasonings, Mix with Hand Blender

Cook 20 oz chopped spinach in the microwave

Add Chickpeas, Spinach, Mushrooms & Sausage to beaten eggs
Step 7
Remove hot pre-heated pot from the oven and place on stove top. Add 1 TBSP fat and use a silicon brush to coat the inside evenly.
Step 8
Pour in the egg mixture.
Step 9
Cook at 350 for 30 min, then 20 min, then 10 min, stirring between time points.
