I whip this up every year after the holiday & it truly is the coziest meal, uses up tons of pantry ingredients & so so flavorful! Plus you can only eat leftovers for so long 😉

Ingredients
8 servings
2 Tbspolive oil
1onion
medium, chopped
1bell pepper
any color, chopped
3garlic cloves
minced
2 x 15 ozcrushed tomatoes
cans
15 ozcan corn
15 ozcan black beans
15 ozcan kidney beans
4 ozcan green chilis
mild or hot
4 cupschicken broth
2 cupsturkey
shredded, leftover, or chicken
1 Tbspcumin
2 tspchilli powder
1 tspsmoked paprika
½ tspsalt
pepper
oregano
Instructions
Step 1
Heat olive oil in a large pot over medium heat until it begins to shimmer. Add onions & peppers, sauté for 3 minutes until slightly softened.
Step 2
Add garlic, cook for 1 minute until fragrant. Add tomatoes, corn, chilies, beans, spices, broth & stir until combined.
Step 3
Bring mixture to a boil, then add turkey & turn heat down to low. Simmer uncovered for 30 minutes, then serve in bowls with any toppings you desire! Leftovers stay good in fridge for up to 5 days
