Step 1
Pre-heat oven to 375. Mix ground turkey with egg and parmesan. Add 1 tbs dried oregano and 2 chopped basil leaves, with desired salt and pepper. Form meatballs and place on baking sheet, bake for 30 minutes.
Step 2
Chop red bell pepper, roma tomatoes, and cherry tomatoes into small pieces and place onto baking sheet. Top with 2 tbs olive oil, 2 garlic cloves chopped, and mix around. Bake for 30 minutes.
Step 3
Bring water to a boil and add pasta and cook until desired consistency. Remove roasted vegetables from oven and blend in food processor until smooth. Add to pan with 2 tbs olive oil and 2 garlic cloves chopped.
Step 4
Remove meatballs from oven and add to sauce and coat. Add 1 cup cream or DF alternative and salt and pepper. Mix around meatballs until coated. Drain and serve pasta and top with roasted red pepper sauce and meatballs.
