In Bulgaria as all the necessary ingredients have just turned ripe – tomatoes, peppers, eggplant (optional) 😊, some whole families or even group of neighbors will spend their whole coming weekend to bake on fire the peppers and eggplants and then to boil on fire the whole pot with the lyutenitsa to prepare it in cans for the winter. Some fun pictures that represent the process are below in addition to the recipe but it’s the proportion between the ingredients as well as some additional spices that makes this tasty dish a family secret and the lyutenitza’s taste so diverse around the country.

Instructions
Step 1
Roast the red peppers, peel and seed, and grind coarsely. Cut the tomatoes in 4-5 pieces each, grind and toss with the peppers in oil, fry for about 10 minutes. Add the sugar and the salt, add some water and simmer until the mixture thickens. Half way through, add the ground chili peppers.
Step 2
Preserve in jars. Eat cold.
