Instructions
Step 1
Preheat the oven to 400F.
Step 2
Use a sharp paring knife to peel and slice plantains, then steam over boiling water until tender, about 10 minutes.
Step 3
Place plantains in a food processor or blender and add milk, egg, chives, and jalapeno.
Step 4
Use on/off pulses to process mixture until it's well combined and has the texture of cooked oatmeal.
(If you overprocess, the mixture will be gummy.)
Step 5
Lightly oil a 9 inch pie plate.
Spoon mixture into the pie plate and pat it flat with your hand.
Step 6
Bake until heated through, about 10 minutes.
Step 7
Slice into wedges, top with tomatoes and serve warm.
