Instructions
Step 1
Combine haloumi, oats, flour, chives and snowpeas in a large bowl, and make a well in the centre. Add egg and buttermilk and stir until just combined.
Step 2
Spray a non-stick frying pan with oil and heat over medium heat. Drop ¼ cupfuls of mixture into the pan, allowing room for spreading. Cook for 2 minutes, then flip and cook the other side for 1-2 minutes or until fritters are cooked through. Transfer to a plate and keep warm.
Step 3
Spray pan again and cook remaining fritters.
Step 4
Serve fritters on serving plate, with tomato and rocket.
