Instructions
Step 1
In a bowl, soak vermicelli in hot water for 10 minutes. Drain and cut vermicelli into half, place vermicelli evenly on a plate.
Step 2
Prepare and dice garlic, slice red chili (optional) and scallion, set aside.
Step 3
Clean and cut shrimp open from the back without cutting off the tail, devein the shrimp, wash thoroughly with water, drain and arrange shrimp one next to each other on the plate filled with pre-soaked vermicelli.
Step 4
To make the sauce, heat up 4 tablespoons of cooking oil in a skillet, add in diced garlic once oil gets hot. Simmer the garlic on low heat until golden brown. Further add in diced red chili, oyster sauce, sugar, light soy sauce, black pepper powder and chopped scallion to taste, mix well.
Step 5
Apply a small amount of garlic sauce on top of every single shrimp on the plate; transfer the plate to a hot steamer. Steam for about 4 minutes.
Step 6
Remove from the steamer, garnish with chopped scallion, quickly sear it with hot oil, serve immediately~
