Instructions

Prepare Ingredients

Step 1
To make pancakes, combine flour, oat bran, sugar, baking powder, baking soda and salt in a large bowl. Mix well.

In a medium bowl, whisk together cheese, milk, lemon juice, eggs, butter, lemon zest and vanilla.

Heat Griddle

Preheat griddle to medium-high heat.

Prepare Batter

Step 4
Add wet ingredients to dry ingredients and stir just until the dry ingredients are moistened. Batter will be thick. Do not over mix!

Cooking

Spoon batter immediately onto preheated griddle. Gently spread batter to about 5 inch diameter, as required.
Step 6
Cook for about 1 1/2 minutes per side, until pancakes are light golden brown and cooked through. Be careful not to burn them. Serve hot, topped with fruits, syrups or homemade sauces!

Storage

Step 7
Pancakes can be frozen, separated by parchment paper.
