Sweet Chili Butter Japanese Sweet Potatoes

Ingredients

For the sweet chili butter:

2 Tbspunsalted butter
melted

1 Tbspolive oil

2 Tbspsweet chili sauce

½ tspsalt

¼ tsppepper

2 Tbspscallions
chopped
For the potatoes:

1.25 lbsJapanese sweet potatoes
halved and scored then cut into 1 inch thick wedges
Sweet chili butter
from above

For the garlic-sesame tahini:

1 Tbsptahini

1 tsprice vinegar

1 tspsugar

¼ tspsesame oil

½ tsphot sauce

½ tspminced garlic

⅛ tspsalt

⅛ tsppepper

2 tspwater

Instructions
Step 1
Preheat the oven to 425. Line a sheet pan with parchment paper and set aside.
Step 2
Make the sweet chili butter. Add the butter, oil, sweet chili, salt, pepper and scallions to a small bowl. Mix to combine.
Step 3
Add the potatoes to a large bowl, add the sweet chili butter and toss to coat. Next, spread the potatoes out on the sheet pan, season with a bit of salt and pepper and place in the oven for 35-40 minutes, flipping them halfway. The potatoes should be browned and slightly caramelized.
Step 4
While the potatoes roast, make the Garlic-Sesame Tahini. Add the tahini, vinegar, sugar, sesame oil, hot sauce, garlic, salt and pepper to a medium bowl. Whisk to combine, then add the water, one teaspoon at a time, and whisk. Continue to add water to desired consistency.
Step 5
Spread the tahini in a thin layer onto a plate, top with the potatoes then extra sweet chili, peanuts, cilantro and black pepper.
