Hasselback potatoes are a style of preparing and cooking potatoes that involves making thin, evenly spaced slices along the length of the potato without cutting all the way through, resulting in a beautiful fanned out potato. This recipe adds a delicious miso honey glaze on top of the potatoes that you won't be able to get enough of! Each slice of potato is coated in the glaze and topped with cheese for extra yumminess!

Instructions
To make your hasselback potatoes,

Preheat your oven to 400°F (200°C).

Scrub the potatoes clean, and pat them dry.

Place a potato on a cutting board, and make thin, evenly spaced slices across the length of the potato, being careful not to cut all the way through. You can place chopsticks or wooden spoons on each side of the potato to act as a guide for the knife, preventing you from cutting through.

Place the sliced potatoes on a baking sheet.

Generously brush the potatoes with olive oil, ensuring the slices are coated well.

Season the potatoes well with salt and pepper, making sure you season between the potatoes slices as well.

Bake in the preheated oven for about 40-50 minutes or until the potatoes are golden brown and crispy on the edges. The exact time may vary depending on the size of your potatoes and your oven.

Once the potatoes are cooked through and crispy on the edges, remove them from the oven.
To make the miso honey glaze,

In a saucepan over medium heat, melt the butter.

Add the minced garlic to the melted butter and sauté for 1-2 minutes until the garlic becomes fragrant. Be careful not to let it brown too much.

Pour in the honey and add the miso paste. Stir well to combine the ingredients.

Adjust the sweetness or saltiness by adding more honey or miso paste if needed.

If you like a bit of heat, you can add a pinch of crushed red pepper flakes to the glaze.

Allow the glaze to simmer for 2-3 minutes, stirring occasionally, until it thickens slightly.

Once the miso honey glaze has reached the desired consistency, remove it from the heat.

Drizzle the glaze over the hasselback potatoes and top them with shredded mozzarella and parmesan cheese.

Broil the potatoes until the cheese melts and becomes lightly golden. Be careful not to over broil the potatoes or the sauce will burn.
