Step 1
Pre heat oven to 200° / fan 180° / gas 6
Step 2
Cut baking potatoes up into wedges and place on baking tray, spray with cooking spray and season lightly with fajita seasoning. Place in oven for 35 minutes until golden brown

Add mince to pan and cook
Step 4
Add onion and pepper and fry until cooked
Step 5
Stir in tinned tomatoes
Step 6
Add cumin, fajita seasoning, paprika and few pinches of black pepper. Cook until most of the liquid is evaporated
Step 7
Add in fresh tomatoes
Step 8
Pre heat grill to high
Step 9
Tip wedges into over proof dish, add in filling, sprinkle over cheese and grill for 10 minutes
