Ingredients
8 servings
3 lbred baby potatoes
¼ cuplow sodium soy sauce
¼ cuplime juice
3limes
2 Tbspfresh ginger
minced, from 2 inch piece
1 Tbsptoasted sesame oil
1 Tbsphoney
2 tspAsian chili-garlic sauce
optional
1 Tbspfish sauce
1 tspkosher salt
4 cupsred cabbage
shredded
¾ cupcilantro
plus more for serving
4scallions
thinly sliced pkues more for serving
3 Tbspwhite sesame seeds
or black
Instructions
Step 1
Place potatoes in large pot and cover with cold, salted water. Bring to a simmer over medium heat. Reduce heat to low, simmer until fork tender, 10 to 12 minutes. Drain and rinse under cold water. Let cool in colander for 10 minutes. Sluce potatoes in half or quarters if large.
Step 2
Meanwhile, whisk soy sauce, lime juice, ginger, sesame oil, honey, fish sauce, chili-garlic sauce and salt in a large bowl.
Step 3
Toss potatoes, cabbage, cilantro, and scallions with dressing in bowl. Cover until chilled., 30 minutes to 12 hours. Sprinkle with sesame seeds and scallions.
