Ingredients
6 servings

1onion
med, chopped

3 Tbsolive oil

1 x 4 ouncescan chopped green chilies
drained

3 TbsAll Purpose Flour

2 tspground cumin

1 x 15.8 ozcan great northern beans
or navy, drained

¾ cuplentils

1 x 14 ozcan chicken broth
I sometimes use 2 cans

1 ½ cupchicken breast
cooked, chopped

monterey jack cheese
shredded, optional

Instructions
Step 1
In a large pot over medium heat, cook the onions in oil for 4 minutes or until transparent.
Step 2
Add green chilies, flour and cumin; cook and stir for 2 minutes.
Step 3
Add beans and chicken broth; bring to a boil.
Step 4
Reduce heat; simmer for 10 minutes or until thickened.
Step 5
Add chicken; cook until hot.
Step 6
Garnish with cheese, sour cream and salsa and Fritos, if desired.
