Step 1
1. Add your bacon lardons to a cold pan and fry until crispy
Step 2
2. Meanwhile, add pea shoots in a layer on the bottom of your bowl.
Step 3
3. Add diced onion, apples and pepper in a layer. Grind some black pepper and a squeeze of lemon juice over it.
Step 4
4. When bacon is nearly done, slice your avocado and add to the top layer of the salad. Squeeze more lemon juice over the avocado to prevent it from browning.
Step 5
5. Once bacon is crisp, sprinkle over the top of the salad while still warm.
