Ingredients

2 Tbspgroundnut oil
or coconut

2 tspground coriander

2 tspground cumin

1 tspground turmeric

Fresh red chilli
finely chopped

3 tspsweet smoked paprika

2 tspgaram masala

2 TbspGreek yogurt
or coconut

0.5Lemon
halved

4garlic cloves
crushed

fresh ginger
10cm, finely chopped

1 tspsalt

150gfresh plum tomatoes
halved

100mlwater

1.2kgchicken portions
a mix of boneless thighs & breasts is ideal

1Red pepper
cubed

100gfresh spinach
also optional
Instructions
Step 1
Mix together all the above ingredients apart from the spinach, lemon, tomatoes and water.
Step 2
Get a pan onto a medium heat and add the oil.
Step 3
Add the chicken and it’s marinade and cook for 15 minutes. Squeeze in the lemon and add the lemon halves to the pan. Add the tomatoes and the water and simmer for 10 minutes.
Step 4
Taste, season and serve, if you like wilting spinach in at the end.
