Instructions

Step 1
Preheat oven to 350F

Combine ground beef, bacon, garlic, eggs and cheese.

Stuff flank with ground beef mixture and close up opening by sewing with cooking thread or toothpicks.

Sprinkle both sides of flank with chilli, salt and pepper.

Place in a roasting pan.

Pour in half a cup of water to prevent from drying out. Cover and place in the oven for approximately 1 1/2 hour. Basting every 30mins and piercing after the first 30 mins. Check internal temp at 1 hour. Take out of oven once cooked through. I like to wait till it reaches 18of.

Remove from roasting pan and let rest for about 5 mins.

Meanwhile run the liquid from the roasting pan through a sieve into a bowl and pour back into the roasting pan.

Place roasting pan on the stove burner at medium heat.

Slice the stuff flank into 1 inch slices and place in the roasting pan.

Simmer for a few minutes basting occasionally.

Best served with Mashed Potatoes.

Don't let the liquid go to waste.

Pour over meat and mashed.
