Instructions

Step 1
In sm. pot, combine rice, ¾ cup water, & pinch of salt. Bring to a boil, cover, & reduce to low simmer. Cook (15-18 min.) until rice is tender. Keep covered off heat until ready to serve.
Step 2
Heat drizzle of oil in med. pan over med. heat. Add pork, garlic, & ginger; season with salt & pepper. Cook (2-3 min.), stirring, until pork is warmed through. • Stir in ponzu, vinegar, 2½T sweet soy glaze, ¼C water, & ½t sugar; bring to a boil. Add green beans, cover pan to steam. Reduce heat to low; simmer (1-2 min.) until saucy. (Add cornstarch slurry to make sauce thick enough to cover beans.)
Step 3
(OMIT -JG)!In a small bowl, combine mayonnaise with Sriracha to taste. Stir in water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt.
Step 4
Fluff rice with a fork; stir in 1 TBSP butter (2 TBSP for 4 servings). Season with salt and pepper to taste.
Step 5
Divide rice between bowls; top with pulled pork, green beans, & sauce. (Garnish with peanuts. Drizzle with Sriracha mayo and serve. - OMIT-JG)
