Instructions
Prepare the ingredients & make the glaze
Step 1
Wash and dry the fresh produce.
Step 2
Peel the carrots, then slice on an angle.
Step 3
Cut off and discard the bottom 1/2 inch of the broccoli stem, cut the broccoli into small florets.
Step 4
Peel and roughly chop 2 cloves of garlic.
Step 5
Thinly slice the scallions separating the white bottoms from the hollow green tops.
Step 6
In a bowl, whisk together the soy sauce, sweet chili sauce, vinegar, and 2 tbs of water.
Cook the rice
Step 7
In a small pot, combine the rice, a big pinch of salt, and 1 cup of water. Heat to boiling on high.
Step 8
Once boiling, reduce the heat to low. Cover and cook, without stirring, 13-15 minutes, or until the water has been absorbed and the rice is tender.
Step 9
Turn off the heat and flung with a fork.
Cook the vegetables
Step 10
Meanwhile, in a large pan, (nonstick, if you have one), heat the sesame oil on medium-high until hot.
Step 11
Add sliced carrots and broccoli florets, season with salt and pepper. Cook stirring occasionally, 3-4 minutes, or until lightly browned.
Step 12
Add 1/3 cup of water (carefully, as the liquid may splatter). Cook, stirring occasionally, 2-3 minutes, or until the vegetables are softened and the eater has cooked off.

Add the chopped garlic and Sliced white bottoms of the scallions (if the pan seems dry, add a drizzle of olive oil). Cook, stirring frequently, 1-2 minutes, or until softened.
Step 14
Transfer to a bowl, taste, then season with salt and pepper if desired. Cover with foil to keep warm.
Step 15
Wipe out the pan.
Cook the pork and serve your dish.
Step 16
Pat the pork dry with paper towels, season with salt and pepper on both sides.

In the same pan, heat 2 tsp of olive oil on medium-high until hot.
Step 18
Add the seasoned pork. Cook 4-6 minutes. Flip and cook 4 minutes, or until browned.
Step 19
Add the glaze (carefully, as the liquid may splatter). Cook, frequently spooning the glaze over the pork, 1-2 minutes for medium (the center maybe slightly pink), or until cooked to your desired degree of doneness.
Step 20
Transfer to a cutting board and let rest at least 5 minutes. Once rested, slice crossways.
Step 21
Serve the cooked rice topped with the cooked vegetables and Sliced pork (including any glaze from the pan). Garnish with the Sliced green tops of the scallions and sesame seeds.
