Fluffy Crumpets
Crumpet batter is similar to pancake batter but with a raising agent which makes it bubble and become thicker, light, and fluffier than a pancake. They're actually thicker and smaller, a bit like an English muffin with a bubbly outside and chewy inside.

Instructions
Batter
Step 1
Beat together 1 egg and 3 Tbsp sugar.
Step 2
Add 1/2 tsp vanilla, 2 Tbsp oil, and a pinch of salt. Continue beating.
Step 3
Add 1 C flour and 1 C milk and beat until smooth.
Step 4
Add 2 tsp baking powder and beat for just a few seconds.
Frying
Step 5
Heat a pan on medium heat. Grease.
Step 6
Ladle the batter onto the hot pan.
Step 7
Once bubbles are formed, turn it over.
