Instructions
Step 1
Peel and cut potatoes into 2x2 inch pieces. Soak them in water for 24 hours. Drain them. Add water to a pot with potatoes, water should cover potatoes + 2 inches more. Boil for 6 minutes or until pieces starts to soften. Potato pieces need to be al-dente. Drain and set aside
Step 2
Preheat oven to 375 F

Mix all ingredients in a bowl
Step 4
Place potatoes on 2 big baking sheets (21 x 15 in)
Step 5
Bake for 15-20 minutes on one side and cook for an additional 15-20 minutes
Step 6
Add salt and serve
