Step 1
Slice zucchini into coins
Step 2
Cook zucchini on a nonstick skillet on low/medium heat
Step 3
Once half cooked throw in the shrimp
Step 4
Cook the pasta in salted water but leave slightly undercooked
Step 5
Once cooked throw the pasta in the pan with zucchini and shrimp
Step 6
Add cream and amalgamate it
Step 7
Add black pepper and fresh mint to garnish and serve
