Ingredients
30 servings
2 cupsoil
with a high burning point
1 ½ cupschili flakes
10chile de árbol
crushed up by hand
0.5white onion
thinly sliced
10 clovesgarlic
thinly sliced
3star anise
1cinnamon stick
1 tblscumin seed
1 Tblscoriander seed
1 Tblswhite peppercorns
5green onion
¼ cupginger root
4bay leaves
1 Tblsgochujang
¼ cupsoy sauce
2 Tblsbrown sugar
1 tspsesame oil
0.25pistachios
¼ cupcashews
½ cuppeanuts
1 tspmsg
¼ cuptoasted sesame seeds
Instructions
Step 1
Thinly slice your white onion and fry in the oil until it’s crispy repeat this step with your garlic
Step 2
Once the garlic and onion and fried and crispy set aside and pour that same oil into rest of aromatics and keep on low heat for about 1 hour. The longer your fry them the better the flavor
Step 3
While the aromatics are going toast all your nuts and sesame seeds
Step 4
Then in a mixing add add your chili flakes and brown sugar
Step 5
Let your oil cool down for about five minutes so the chili won’t burn and then strain your oil of all the aromatics
Step 6
Once the oil and chilis are combined you can add the rest of your ingredients to the mix including the crispy onion and garlic and that pretty much it once it cools refrigerate it
