Honey Lavender Madeleines

Ingredients

Honey Madeleines
2eggs
room temp
¼ cupsugar
¼ cuphoney
plus more for topping
1 tspvanilla
¾ cupcake flour
¼ tspbaking powder
¼ tspsalt
½ cupbrown butter
melted
Lavender Filling
¼ cupmascarpone
or cream cheese
2 Tbsphoney
½ Tbsplavender
culinary, finely chopped
1 dropspurple food coloring
½ cupheavy cream

Instructions
Step 1
Whip the eggs, sugar, honey, and vanilla until light and fluffy, about 8 minutes.
Step 2
Sift in the flour and gently fold. Pour the melted brown butter and gently fold until just combined.
Step 3
Chill batter for at least 30min. Brush the madeleine pan with butter, and stick it in the freezer for 10min.
Step 4
In the meantime, make your lavender filling. Cream your mascarpone, honey, lavender, and purple food coloring. Add your cold heavy cream and beat until frosting is light and stable. Transfer to a piping bag.
Step 5
Pipe or scoop the chilled batter into the cold madeleine pan. Bake at 350f for 10-12minutes
Step 6
Let the madeleines cool down completely. To assemble, start by cutting off the “hump” on the madeleines. Pipe the lavender frosting on the smooth side of the madeleine, and place another one on top to create a cookie sandwich. Top with honey, and enjoy!
