Step 1
1. Dice onion and chop carrot into bite sized pieces
2. In a large pot, heat the olive oil before adding onion & garlic & cooking until tender 3. Add carrot & cook until soft 4. Add tomato paste, basil, oregano & cook for 2-3 minutes 5. Add the crushed tomatoes, vegetable stock & tvp & bring to a boil to let simmer for 10 minutes 6. Break apart the lasagne noodles and add to the pot. Let simmer for another 10-15 minutes or until pasta is cooked 7. Stir in the spinach & cheese and let cheese melt & spinach wilt & season to taste
