Chicken Alfredo With Caramelized Onions and Bacon

Instructions
Step 1
In a large pan cook bacon until crisp. Once cooked through place bacon in a lined plate, let cool then crumble, save to use as garnish.
Step 2
Do not dare discard the bacon fat! Salt the chicken chunks and add to the bacon fat and brown, but don't cook all the way through. With a slotted spoon remove chicken pieces, cover and keep warm.
Step 3
If needed, add a little oil to pan and add onions, cook slow and steady until caramelized, don't forget to mix around here and there. Add the 2 tbsp chicken stock and lemon juice to the onions and cook a few more minutes.
Step 4
For the sauce: While the onions are getting caramelized, chop the cauliflower. Fill a saucepan with 1/3 way full of water and bring it to a boil. Add cauliflower and simmer until tender, about 15 minutes.
Step 5
Drain the cauliflower and add to a blender along with the chicken stock, coconut milk, salt and garlic powder. Puree until smooth and liquid. Add sauce to caramelized onions.
Step 6
Add reserved chicken chunks to sauce and simmer until sauce is heated through and chicken is cooked all the way.
Step 7
Cook noodles to manufacturer's specifications. Pile noodles and sauce onto plates. Garnish with crumbled bacon and green onions.
Step 8
To make sweet potato noodles: wash and peel sweet potatoes. Use a spiralizer to make them into noodles. Bring a pan of water to boil, add sweet potatoes to boiling water and cook until softened, but still al dente, about 4-5 minutes. Drain the sweet potato noodles and serve with sauce, bacon, and onions.
