Instructions
Step 1
Cook the orzo pasta according to package instructions, then drain and rinse with cold water. Set aside.
Step 2
In a large bowl, combine the chickpeas, cherry tomatoes, and red onion.
Step 3
In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, salt, and pepper until well combined.
Step 4
Add the orzo pasta to the bowl with the chickpeas, cherry tomatoes, and red onion. Pour the dressing over the top and toss everything together until well-coated.
Step 5
Add the crumbled feta cheese and chopped basil to the bowl and gently stir everything together.
Step 6
Serve the salad chilled or at room temperature.
