Instructions

Step 1
In a large pot over high heat, heat the olive oil.
Step 2
Add the onion, carrot, and garlic. Saute 5 minutes.
Step 3
Add the vegetable broth, lentils, and oregano and bring to a boil. Reduce heat to simmer. Cook the soup for 15 to 20 minutes. Or until lentils are tender.
Step 4
Add the broccoli, cover the pot and simmer 5 more minutes.
Step 5
Remove the pot from the heat and stir in the olives and parsley. If the soup is to thick, stir in some water.
Step 6
Ladle into bowls, drizzle with olive oil and serve.
