Instructions
Step 1
1. Blend the bunch of cilantro, garlic cloves, 1/4 onion, juice of 2 lemons, 1/4 c water, and 2 tbsp salt.
Step 2
2. Chop chicken into 1 inch squares and top with the cilantro marinade.
Step 3
3. Marinate for a minimum of 30 minutes and up to 8 hours.
Step 4
4. Chop the remainder of the onion, bell peppers, and tomatoes.
Step 5
5. In a greased pan, add the marinated chicken and cook for 4 minutes.
Step 6
6. Add in the bell peppers and onions. Combine well and cook and cover for 6 minutes.
Step 7
7. Add tomatoes and cook for an additional 5 minutes or until vegetables are fully cooked.
Step 8
8. Add seasonings of choice.
Step 9
9. Assemble 4 bowls with side of choice. I went with air fried potatoes. Each bowl will have 1.5 c chicken mixture and side.
